A Classic Party Dip

As you may remember, I do not care about watching football, but I do care about having tasty football snacks. Today I made the classic Mexican 7-Layer Bean Dip. There are many varieties, but they generally start with a bean dip base followed by taco topping layers. I use Fritos Original Bean Dip as my base, which I think adds a little something something. I also use freshly chopped tomatoes rather than salsa, so it is a little less soupy than some I have tasted.

I have never had problems locating cans of Fritos Original Bean Dip until today’s grocery trip. To my horror, I found out that my local Publix no longer carries the bean dip because not enough people were buying it. So, I tried a few other stores and finally found two cans at the gas station convenience store. I think that probably sums up the nutritional value of this party dip, but honestly, who can refuse the stuff?

Ingredients

  • 2 (9-oz) cans Fritos Original Bean Dip
  • 1 container guacamole (about 10 oz.)
  • 2 ripe tomatoes, seeded and diced
  • 1 pkg mild taco seasoning
  • ~12 oz. sour cream
  • 2 c. Mexican cheese blend, grated
  • 3 green onions, chopped

Directions

  • Scoop the 2 cans of bean dip into a 9 x 13 casserole dish and spread evenly across the bottom with a spatula.

  • Dollop the guacamole on top of the bean dip and gently spread out using the spatula. Try not to disturb the bean dip layer. It’s kind of like frosting a cake.

  • Sprinkle the chopped tomatoes on the guacamole.

  • In a small bowl, mix the taco seasoning with the sour cream. Combine well. It will be a light orange color. Spread the sour cream mixture over the guac and chopped tomatoes. Gently spread with the spatula trying not to disrupt the layer beneath.

  • Sprinkle the grated cheese on top.
  • Sprinkle the green onions over the cheese.

Mexican 7 layer dip

  • Serve with Frito scoops or tortilla chips.
  • Can be made ahead. Cover and refrigerate until ready to serve.

Sun Dried Tomato Dip

I needed a festive dip to take with me to a friend’s house, so I pulled out the recipe for my old friend, sun dried tomato dip (courtesy of Ina Garten). The dip originally appeared in my Labor Day Potluck Dinner post. After assembling the dip and the veggie tray, I realized how perfect this dip is for the holidays. The dip is a pinky red color, and I used several red and green raw vegetables. The finished product is quite merry and bright.

Ingredients

  • ¼ c. sun-dried tomatoes in oil, drained and chopped (get plain oil, any seasoning changes the dip flavor)
  • 8-oz. cream cheese, room temperature
  • ½ c. sour cream
  • ½ c. good mayonnaise
  • 10 dashes Louisiana hot sauce or Tabasco
  • 1 t. kosher salt
  • ¾ t. black pepper
  • 2 scallions, thinly sliced (white and green parts)

Directions

  • Puree the tomatoes, cream cheese, sour cream, mayonnaise, hot sauce, salt, and pepper in a food processor fitted with a metal blade.
  • Add the scallions and pulse twice. Set aside a pinch of scallions to garnish the top of the dip when serving.
  • Serve at room temperature with sugar snap peas, celery sticks, carrot sticks, pretzel sticks, pita chips, etc.

Notes

  • Make sure cream cheese is at room temperature to get the ingredients to blend together smoothly.
  • Sugar snap peas are my favorite raw vegetable for this dip.
  • Pita chips and Snyder’s pretzel dipping rods are my favorite cracker-y vehicle for getting this dip to your mouth.

Charleston Cheese Dip

We grilled hamburgers with a few friends after the Thanksgiving eat-a-thon last week, and I needed a little snacky bite while people were waiting for dinner. Since I had not consumed enough rich, calorie filled food prior to the hamburger dinner (ha!), I decided we needed a really good dip with lots of melted cheese. I made a Charleston Cheese Dip that is incredible. The consumption rate may have been faster than the Hot Vidalia Onion Dip, which I did not think possible.

Ingredients

  • 1/2 c. mayonnaise
  • 8-oz. package cream cheese, softened
  • 1 c. grated sharp Cheddar cheese (I used Cracker Barrel)
  • 1/2 to 1 c. Monterey Jack cheese
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1 dash cayenne pepper (optional)
  • 8 butter crackers, crushed (I used Ritz)
  • 8 slices bacon, cooked and crumbled
  • Frito scoop chips, more Ritz crackers, or pita chips for serving

Directions

  • Preheat the oven to 350 degrees.
  • In a medium bowl, mix the mayonnaise, cream cheese, Cheddar cheese, Monterey Jack cheese, green onions, minced garlic, and cayenne pepper (if using).
  • Transfer the mixture to a shallow baking dish. I used a quiche dish. A 9-inch pie pan will work too.
  • Top the mixture with cracker crumbs and bake until heated through, browned on the top, and bubbly around the edges.
  • Remove from the oven and top with the bacon.
  • Serve immediately with chips or crackers.

Sugar Bacon

Gather round, bacon lovers. One of my dearest friends from the ATL e-mailed me about my sugar bacon recipe. This unbelievably delicious treat has been off my radar for awhile. It is so good I actually requested it as a passed hors d’oeuvres at my wedding. I made a batch today and practically fell over while eating (the entire plate I might add– by myself) because it is so good. Let me know if you think it is as delicious as I do.

  • bacon (I use about 1/2 lb. for 4 people)
  • light brown sugar
  • dry mustard (optional)
  • Silpat, Tephlon bakeware liner, or foil to line your pan
  • jelly roll pan, roasting pan, or something with a lip

  • Preheat oven to 400 degrees.
  • Cut bacon slices in half. Scoop about 3/4 c. of brown sugar into a wide, flat dish. Add a few dashes of dried mustard if using and mix with a fork, so the brown sugar is separated.

  • Line your baking pan with some sort of liner. I like the Tephlon bakeware liners or tin foil. You want the liner to come up around the edges of the pan, so carmelized brown sugar does not get on your pan. That makes the clean-up very difficult.

  • Pat each slice of bacon in the brown sugar on both sides. The bacon will NOT be thickly covered with the brown sugar.
  • Place bacon slices side by side in the pan. Try not to let the edges touch. The bacon gets very sticky while cooking.

  • Bake bacon for 10 minutes. Remove from the oven and turn slices over (tongs work best). Put bacon back in the oven and cook another 5 minutes until browned and crispy. Watch carefully after the first 10 minutes of baking because the bacon changes from slightly undercooked to burned in a blink.

  • Remove the pan from oven and get the bacon slices off the pan immediately. Lay the bacon slices flat on a cooling rack or a non-stick cookie sheet. I put paper towel under my cooling rack. Do not put the bacon directly on the paper towel! Let cool to room temperature before serving.

  • I like regular Oscar Mayer original slice bacon. I have tried fancy bacon or a thicker cut, and the bacon does not crisp as well or get the good candy texture.
  • These are great served at a brunch or party. Stack the strips of bacon like Lincoln Logs on a serving plate. Serve as finger food.

American Girl Birthday

American Girl Party Tent

Well, you had to know this day was coming. Miss Priss asked for an American Girl birthday party, and TheRoomMom complied. We have attended a few AG birthday parties recently, and we needed a new spin to the theme. I was already working on the American Girl camping supplies, so we opted for a backyard American Girl campout birthday (sleepover NOT included– I did recognize my limits on this one).

American Girl Party Invitation

The Invitation

I know it is popular to use Paperless Post or Evites right now, but I really like paper party invitations delivered via snail mail. There were several fun camping party choices on Etsy. I ordered through a store called Memories Too. The store owner e-mailed a JPG file to me after about 4 business days. I had one edit, which she turned around in a few hours. I uploaded the image to FedEx Office and had the invitation printed in color on white cardstock. I found plain pink envelopes at a local paper store.

The invitation asked guests to bring a doll or stuffed friend with them to the party, so they would have a camping buddy.

The Activities

When guests arrived, they received a doll sleeping bag that had a name tag with a number. We grouped the guests based on the tag numbers on the sleeping bags and rotated the party guests through three stations. That kept all of the guests spread out for most of the party and gave everyone something to do until it was time for cake.

American Girl Dolls Camping

  • Station 1— We set up 3 camping tents in the backyard. This group played in the tents with the dolls and the sleeping bags. TheRoomDad monitored this area and provided some monster invasions from time to time.

  • Station 2— This group searched for small twigs in the yard then used the twigs to make small bug jars and marshmallows on a stick. I had a table with the supplies as well as my regular babysitter to run this station. My sitter showed everyone how to set up the bug jars, make the fake marshmallows, and she monitored supplies.   • Station 3— This group made a doll sized campfire. I ran this station, and it was set up in a similar way to the bug jar area. For full campfire instructions, visit the American Girl Camping Post.

Each guest had a paper plate with her name on it. When the child finished a craft, she put her item on the paper plate. We set the plates to the side, so parents could easily carry the crafts to the trash can at their home home at the end of the party.

American Girl Mini Brownie Bites

The Cake

Miss Priss wanted chocolate! We ordered a mini chocolate fudge cake from the grocery store. I call these “smash cakes” and see this mini size at first birthday parties a lot. We put candles on the cake and sang, but we did not cut the smash cake. Instead, guests ate mini brownie bites that had been decorated with pink and white flowers.

The Food

Keeping with the doll theme, I tried to do all mini or bite sized food. After we sang, the kids went through a buffet line and picked up the little snacks and brownie bites. It was all finger food, so it eliminated a need for any forks or spoons.

  • Pigs-in-a-blanket— Basically, a mini hot dog. I used 3 rolls of Pillsbury Crescent Rolls and 2 packages of Lit’l Smokies, which yields about 60 pigs. I cut each crescent roll into 3 triangles and then wrap a triangle around a Lit’l Smokie. I follow the baking instructions on the Pillsbury Crescent Roll package.

Mini Dill Dip Party Food

  • Dill Dip— This is Miss Priss’ favorite snack, and one of my signature recipes. I purchased 1-oz plastic shot glasses at the party store and put a dollop of dill dip at the bottom of the cup. We stacked mini carrot sticks, mini celery sticks, and mini red pepper slices in the cups, so they were ready to serve. Click here for the Dill Dip and Chex Mix Recipes.

  • Chex Mix— We saw mini pink popcorn boxes at our independent party store, but I also considered using Wilton mini cake boxes from Michael’s Crafts to hold the snack mix. I did a variation of one of my Chex Mix recipes. This version has popcorn. Click here for the Dill Dip and Chex Mix Recipes.

Marshmallow Smore Party Food

  • S’More on a Stick— We used brightly colored cocktail sticks and stabbed marshmallows. I melted semi-sweet chocolate chips and plain Hershey milk chocolate bars in a double boiler. I crushed graham crackers and placed the crumbs in a flat bowl. I dipped the marshmallow in the melted chocolate, and Miss Priss rolled the chocolate end of the marshmallow in the graham cracker. I must say, these were delicious and much safer than having 17 six and seven year olds standing around a fire pit.

The Party Favors

Guests took home the bug jar and campfire crafts. They also took home the doll sleeping bag. If you have a sewing machine, the sleeping bags are easy to make. However, had I known I would need 17 doll sleeping bags, I might have rethought my decision to have these as party favors. For full doll sleeping bag instructions, visit the American Girl Camping Post.
